this dish was mom’s idea. she had a bunch of idaho potatoes to use up & all of us kids plus four cousins to feed. she googled a recipe for potatoes au gratin & sent me out to get the ingredients. she & anna peeled & sliced five pounds of potatoes, while i shredded the parmesan & gruyere. these potatoes not only made it seem like a divine-smelling bomb went off in our kitchen, but they also disappeared rather quickly. then again, what’s not to love about potatoes & cheese?
this dish was super easy to make with less than 10 minutes of prep. the only time-consuming part is waiting for it to bake for almost an hour, which feels like an eternity when the scent starts to hit you. last piece of advice: definitely don’t make this if you’re watching you’re figure. it’s not exactly a favorite of the slim & trim crowd.
