superfood salad with pomegranate, avocado & fennel

some of my siblings came home for the long weekend, which meant braving a blizzard saturday night for an amazing but indulgent dinner at c.f. prime, followed by a day-long brunch at our aunt’s house on sunday. needless to say, i was long overdue for a detoxifying dinner this evening. it doesn’t hurt that this salad was quick & simple to prepare as well as loaded with healthful ingredients.

this salad began its life as a yummy mummy recipe. it ended up being a little too bland & unsubstantial for me, so i made some changes. i added a splash of balsamic vinegar to the mix for flavor & threw everything on a bed of greens to add some substance. now that is what i call a salad!

-4 cups dark leafy greens (i used a prepackaged mix of spring greens & baby spinach)
-4 clementines (two segmented & the juice of the other two)
-1/2 bunch raw broccoli, separated into bite-sized florets
-1 pomegranate (seeds)
-1 avocado, sliced
-1/2 cup fennel, thinly sliced
-1/4 cup walnuts
-1/3 cup olive oil
-1/4 cup balsamic
-salt & pepper to taste

1) combine greens, clementines, broccoli, pomegranate seeds, avocado, fennel & walnuts in a large serving dish.
2) whisk together olive oil, balsamic & juice of 2 clementines. pour over salad & season with salt & pepper to taste.

*makes 6 servings.
