fattoush salad with radishes, cherry tomatoes & lemon-sumac dressing

this is a traditional arabic salad that we eat often in my family. it’s really very simple to make & quite flavorful, using ingredients unique to your average american palate. you can always add feta if you’re looking for more substance. one negative side effect of this salad is dragon breath. unfortunately for my neighbors in yoga class, i had the leftovers of this salad as a snack right before practicing tonight. whoops.

ingredients:
 -1 head romaine lettuce, chopped into bite-sized pieces
-5 radishes, trimmed & thinly sliced
-1 10 oz. package cherry tomatoes
-1/2 a red onion, thinly sliced
-2 persian cucumbers, chopped (i found some at trader joe’s, but if you can’t find any, just use 1 regular cucumber)
-1/2 cup parsley, finely chopped
-1/4 cup mint, finely chopped
-1 cup pita bread, baked until crispy & torn into bite-sized pieces
-1/3 cup lemon juice
-1 tsp sumac
-fresh sea salt & black pepper to taste

directions:
1) combine all ingredients except for lemon juice, sumac, salt & pepper in a large bowl.
2) whisk together lemon juice & sumac & add to the large bowl, tossing the salad to coat evenly with dressing.
3) add several grinds of fresh sea salt & black pepper, to taste.
