lazy was last saturday’s theme song. after getting up early (hate), donning a suit (double-hate), eating breakfast with an apron on (yes, that’s how much i trust my ability to eat without dropping something on myself) & driving to milwaukee & back for an interview, all i felt like doing when i got home was lying on my couch with my dog. this is also known as “nothing.” i was fully prepared to do nothing for the rest of the day but all of a sudden, i started to get hungry (shocker). imagine my frustration. my thought process went something like “oh no, this means i have to get off my ass & actually make myself something to eat before i starve.” when you’re in that lazy of a mood, salad is a logical choice. you just dump a bunch of random stuff in a bowl, drizzle it with some dressing & call it a meal.
it’s a good thing we went light on lunch because we ended up meeting our friends matt & emily out for pizza at the roman candle on willy street later that evening. i had never been & was excited to try it after hearing some good things. for quite awhile, our waitress seemed to have completely forgotten about us after getting us some waters, but she made up for it by knocking a few drinks off our tab at the end of the night. we shared two small pizzas — the bbq pizza & the supreme. both were very good — we’ve been on a roll in terms of finding pizza places that don’t have to overload on the cheese & sauce, because their other ingredients are so good that they need space to speak for themselves.
ingredients:
-4 cups arugula
-2 avocados, thinly sliced
-2 blood oranges, peeled & segmented
-1 pomegranate, seeded
-1 small or 1/2 large red onion, thinly sliced
-2 tbsp orange juice
-1 tbsp balsamic vinegar
-1 tbsp olive oil
directions:
combine all ingredients excluding liquids in a large bowl. in a small bowl or cup, whisk together liquids. pour this dressing over the salad & toss to coat evenly before serving.
*makes 8 servings
**blue cheese & walnuts are also great in this salad
