i’ve been trying to eat more greens, but i always feel so uninspired when it comes to making salads. after resurrecting an old college fav–the signature salad from cosi–for a takeout dinner last week, i knew what would be in my immediate homemade salad future. this colorful beauty, complete with fruits, nuts & cheese, is filling enough to eat for lunch or a light dinner. personally, i had it with leftover of my favorite lasagna… talk about a fast, easy (& not to mention divine) weeknight dinner in the middle of a crazy week. yum!
ingredients:
-2 fistfuls of fresh spinach
-1 pear, cored & chopped into bite-sized pieces
-1 small to medium bunch of red seedless grapes, plucked from the stem (anywhere from 1/2 a cup to a cup of grapes)
-1/2 a small red onion, sliced or chopped
-1/4 cup of pistachios
-1/3 cup blue cheese, crumbled
-balsamic vinaigrette (i like the kind from trader joe’s) or a drizzle of olive oil & balsamic
directions: either toss all ingredients in a large bowl or divide evenly between two plates (makes 4 side servings or 2 main servings).
