fried egg sandwich with blue cheese, spinach, hot & sweet mustard

honestly, i feel guilty that i’ve waited so long to share this one with you. i’ve had this sandwich for breakfast every day this week. that’s how much i like it. i got the inspiration for it from here. my version is super quick & easy (literally takes about 5 minutes). you probably have most of the ingredients on hand, too. one of my favorite parts is the hot & sweet mustard, which trader joe’s has started stocking again (they haven’t carried it for the past two or three years). in college, one of my favorite things to use it on were smoked turkey sandwiches with munster (try it! so simple & so good!). anyway, it’s yummy on this, too!

-1 whole grain english muffin, sliced & toasted
-1 handful spinach (about 1 oz.)
-1/2 tbsp blue cheese crumbles
-1/2 tbsp hot & sweet mustard
-1 egg
-tiny bit of butter (about 1/4 tbsp)

1) melt butter in a small saucepan over medium heat, swirling to coat evenly. crack an egg directly into the pan & let it sit & cook for about 3 minutes or until whites are set.
2) meanwhile, arrange spinach, blue cheese & mustard on the bottom of half of the english muffin.
3) when egg whites are set, i like to use a spatula to flip the whole egg over to cook for a minute or 2 more so that the yolk can set a bit too (the sandwich is a lot less messy that way).
4) carefully transfer egg to the top of the spinach/blue cheese/mustard pile & place the top half of the english muffin on top. enjoy!

*makes 1 sandwich.
